Popia (popiah) is a Chinese-style fresh spring roll. A popiah "skin" (薄餅皮) is a soft, flimsy paper-like crepe or pancake made from wheat flour. To save time, I would advise buying the popia skin outside. The popia skin can be found in some wet markets. But it needs to be eaten fresh or within a day. If left without choices, we could use the tortilla to wrap it. Tortilla is available at Lotus/ Tesco or any hypermarket.
Ingredients (for 4 persons):
1. Popia skin (20 sheets)
2. Coral lettuce (blanched)
3. Crushed roasted peanut (1/2 cup)
4. Seafood sauce (can be found in Lotus/Tesco)
5. Steamed eggs (optional)
6. Peeled Yam bean (1)
7. Black fungus/ mushroom (50g)
8. Red carrot (1)
9. Dried Shrimp (1 cup)
Ingredients 6-9: cut into small pieces
*The highlighted ingredients are the main fillings for popia. They need to be cooked prior to the wrap.
Step-by-step:
1. Cook the crushed dried shrimp in a hot frying pan.
2. After 2-3 mins, add in yam bean, red carrot, black fungus
3. Put in light soy sauce (1tbsp), oyster sauce (1tbsp), salt (1/2 tsp), and pepper(1/2 tsp)
4. Continue to fry for 5 mins to mix well and then add in some 1-2 bowls of water
5. Cover the frying pan with a lid and turn into low flame
6. Simmer for 3 mins and then it is ready to be served.
