My home-cooked meal during lockdown

Today marks the phase 2 of our country lockdown. While staying home for the past 17 days (18 - 31 March, 1-3 April 2020), I also helped out to prepare some simple meals.




1. Tea Leaf Eggs


It is a Chinese dish that often eats as a snack.


It's simple to prepare and healthy as well. Ingredients listed as follow:

Teabag
Garlic (4 cloves)
Soy sauce
Black soy sauce
Cinnamon
Star Anise
Chinese 5-spices powder (五香粉)

The eggs tasted much better after soaked in the tea leaf soap for a night. Put all the ingredients in the electric slow cooker for 24 hours.


After a day, the eggs should look like above.


2. Spaghetti Carbonara


As we did not go out to buy the groceries, thus we only eat what we had in the house. Since canned food has longer storage time, we do like to cook it occasionally for lunch/ dinner.


It's very simple to prepare and less time consuming when we had Prego carbonara sauce that could be heated and added directly to the pasta. But then we prefer to add some vegetables into the sauce so that it would be more nutritious.

Ingredients:
Prego sauce
Pasta 
Thai basil leaves (九层塔) from the garden
mushroom
corn
oregano herb



That's our not-so-western spaghetti.


3. Poke bowl


The poke bowl is one of the nutritious meals that are easy to prepare. You only need to steam or microwave it before serving. 


Ingredients:
Japan green bean (edamame)
carrot
corn
cherry tomato
pumpkin
dried green pumpkin seed
walnut
sesame 
sesame sauce
lap cheong (optional)
oregano herb (garnishing)


I think poke is suitable for vegan and vegetarian too.


4. Wholemeal bread


The ingredients for bread is available at almost all households except yeast which you might purchase at a bakery shop.

Ingredients:
Bread flour
Sugar
Salt
Oil
Water
Yeast
Dried cranberries (optional)
Golden raisin (optional)
Black sesame (optional)


Put all the ingredients in the bread machine and it's all done. Water and oil must be put first followed by sugar and salt. Put the flour on top of the mixture. Lastly, make an indentation in the flour and put the yeast. Cover with the flour before process starts.



Tadah, that's my wholemeal bread. 

That's my sharing of the day when staying home for 17 days.
